This recipe is an oldie in our family, but is definitely a favourite. Originally my Grandma’s recipe, we make this every Easter, usually more than once, and usually making a large batch of it.

However, since we are in lockdown and it is only my mum and I at home this week, I didn’t double up the recipe like I usually do. Although I have no doubt I will be making these again this week before Sunday.


Since everything is in lockdown at the moment, and some ingredients can be hard to get, this recipe uses mostly store ingredients as well as using relatively little of everything, making it the perfect recipe for Easter this year during lockdown.

You can use any shaped cutter for these, but we have always used a fluted circle cutter since that is what my Grandma always used, so I guess its just tradition now. If you don’t have a cutter, then cutting around a glass or just cutting them in to squares would also work.

These biscuits are incredibly moreish and I have eaten so many of them whilst photographing, editing and writing this recipe up, however I have no regrets whilst doing so. They are crunchy biscuits rather than soft, more cookie like ones, are absolutely packed with raisins and the slightly spiced biscuit is just the best.


Personally, this recipe is so child friendly as well as being so incredibly quick and easy, resulting in baked, warm biscuits in half an hour. There is nothing better than these right now. Enjoy!

Makes 16-18 Biscuits
Ingredients:
85g/3oz Butter or Margarine
85g/3oz Caster Sugar
1 Egg
50g/2oz Raisins
1tsp Mixed Spice
175g/6oz Plain Flour
Method:
- Preheat the oven to 170°C Fan and line a baking sheet with baking paper
- Cream the butter and sugar together until combined
- Add in all the other ingredients and mix until a stiff dough has formed, using a little milk if necessary
- Roll out on a floured surface until the dough is as thick as a £1 coin, cut out using a circle cutter before prick before cooking. Optional- sprinkle the biscuits with a little sugar before cooking.
- Bake in the oven for 15 minutes until the edges of the biscuits are golden brown.
