Summer has returned by the looks of the weather this weekend. And I am glad it is back, shame it wasn’t around whilst I was on holiday. I mean, a bit more sun would have been lovely, especially on my birthday. Also keep an eye out for a holiday post that will be posted, at some point… And no, I do not know when…
So I sorta stole the idea for these lovely ice lollies from POPS. These don’t taste exactly like theirs but it is a good second. They have some really cool ice lollies like prosecco and peach and a champagne one, as well as strawberry and mint and then apple and elderflower. If you ever get a chance, you really need to try one.


I must confess I didn’t actually know where to get these from as I had my one on a secret rooftop bar back in May. That was such a good day, and recreating these brought back the day, which was entertaining to say the least. A little googling shows that there are many places that you can get these- Sky Garde, Fortnum and Mason, among others. Oh and you can also get them via Deliveroo.

This recipe is 2 ingredients. 2. How easy is that? And I have seen apple and elderflower juice in some supermarkets, so if you want to be really lazy, then you could just buy that and then pour it straight into your ice lolly moulds and freeze them. Not that these are that hard to make using 2 ingredients, but if you are super lazy then there is always that alternative.
These are so easy (have I stressed that enough) and perfect for summer, as well as all ages.

Makes 6
Ingredients:
600ml Cloudy Apple Juice
2 Tbsp Elderflower Cordial
Also Needed:
Ice Lolly Mould
Method:
- Mix the apple juice and the elderflower cordial together in a large jug with a spout (makes for easier pouring)
- Pour the mixture into your lolly pop moulds and then freeze for 6-8 hours, preferably overnight
- Release the ice lollies from the moulds by running the mould under warm water for 10-15 seconds.
